Native to India, its fruits, known as peppercorns, are widely used as a spice around the world. Green, black, red and white peppercorns are all coming from the same vine but went through a different process.
Black peppercorns come from green peppercorns which have been cooked and left to dry in the sun. Black peppercorn is the spiciest one.
Best black pepper variety
When evaluating the quality of peppercorns in general, you might want to keep in mind some criteria. for example, higher quality peppercorns have a relatively uniform colour and consistent flavour. Furthermore, darker peppercorns tend to be more flavourful.
Depending on the growing regions, taste and aromas vary greatly from one variety to another. Hence it is difficult to say which variety is “better” than the others, as they all have different aromas, flavours and textures. The best solution is to keep several varieties at home and choose depending on the dish you are preparing.
